With the 2013 vintage we return to our beginnings in 2009 when we made our first sparkling wine. Already then from Hárslevelü and, I think, with a convincing result. After we were able to convince ourselves, and maybe you too, that you can also make excellent traditional bottle-fermented Brut Nature sparkling wine from Királyleanka (PRYXX Brut Nature 2010) and Rheinriesling (PRYXX Brut Nature 2012) in Villány, we are back with the PRYXX Brut Nature 2013 returned to our beginnings and to the Hárslevelü. On the one hand, this is due to the fascination that this unique autochthonous Hungarian grape variety exerts on me, but primarily to its suitability for spontaneously fermented Brut Nature sparkling wine produced with traditional bottle fermentation. The interaction of the Villány terroir with the characteristics of the Hárslevelü is convincing here. In the sub-Mediterranean Villány climate with its calcareous loess soils, we can produce sparkling wine from Hárslevelü, which is characterized on the one hand by its mild acidity and on the other hand by the aromas of ripe apricots, linden blossom and honey that are typical for Hárslevelü. This paired with the solid phenolic structure of the Hárslevelü results in what I consider to be an ideal combination for the production of high-quality sparkling wine with invigorating freshness, ripe fruit and the aging potential required for its complexity to unfold. The Hummel PRYXX Brut Nature 2013 touches with its delicate structure, its cool freshness, accompanied by ripe fruit. Its 5-year maturation on the lees gives it a smooth texture and a pleasantly creamy character.
